Who has done a hot and fast butt?
« on: February 24, 2017, 12:08:15 PM »
Doing pulled pork and drip beans on Sunday. I've done Joe and fast ribs with great results. Never a butt or beans though. Who has? What was your approximate cook time? Think the beans will dry out?

I haven't, but I doubt the beans would survive.

First time trying a HnF butt was when I used my Outrider.

http://weberkettleclub.com/forums/grilling-bbqing/the-18'-outrider-is-a-great-cooker/

Worked out to be around 1 hour per pound cooking time.  The results were excellent, so I kept doing it.
I cannot answer your question regarding the beans.

@MacEggs About what temp are you running?

It was over 300°.  Probably in the high end of 325-350°.
A pork butt can handle it.  It's a very forgiving hunk of meat.

Give it a go and let us know the results!  :D

Thanks guys. Probably gonna go this route, and just keep an eye on the beans.

I've seen my buddy Dennis do quite a few of them in the 300-325 range.  They turn out great.  No clue what to tell you about estimating total cook time at higher temps though.

Last butt i did I ran 275 the whole cook. 9 lb butt and 7:30 cook with no stall. That's the highest I've ever ran one and loved it. It was my best to date.

@TheDude

I would recommend to put the beans in a little later, and not at the beginning.  @1buckie does this with excellent results.

I do a hot and fast on most cooks in my Weber kettles. I like to run at about 325 -340 degrees and most cooks take about 6-7 hours from start to finish.

Just before the butts were wrapped (about 3-1/2 hours into the cook)

Butts done on the cooker at a total time of 6 hours and 10 minutes.

Results of my cook.

Well it has snowed, rained and snowing again. 12:30cst and 199°. Dinner is supposed to be 3ish. All should be good. First time not wrapping. We'll see how it tastes, but I think butts are going H&F from now on.

Most recently cooked a butt on 22 rotisserie at around 325 to 350.  It was small about 6.5 lbs but cooked up fast at around 5.5 hours with no stall and no wrap.  It was delicious and super simple.  I'll honestly probably do it in the roti from here in out

It doesn't fall off when it's tender enough to pull?

I was wondering the same thing! I think it would be real easy to spin a butt. Just keep it hot and spinning. I need to try this sometime.
