The 26 makes a great wing cooker. 4 lbs of buttermilk brined wings smoke roasted over persimmon.

It is a lot like apple. A friend of mine cut down a tree last year. I cut it up in good size chunks, and it well seasoned now. I have used on chicken, fish and ribs with good success. The persimmon is the dark colored wood (the chunks with the dark center are mulberry)
