N8man over at the BBQ-Brethren inspired me last week with his thread of Smoked fried chicken. So I had to give it another go, since my first time the breading fell off when you picked up the chicken. This was much more successful.
Picked up some House Autry and doctored it up a little bit more with some Lawry's and Simply Marvelous Peppered Cow. I also soakedthe thighs in buttermilk and Franks Red Hot (I put that s*** on everything)
Some close up shots of the chicken.
Put them in the fridge and went and got the kettle ready. I threw some lump into the chimney and fired it up.
I threw the lump on some used coals and a piece of maple. Left the lid open for about 10 mins to get the fire burning clean and then put the top on.
Once it came up to a steady temp of 375 i opened it up and threw the chicken on.
While it cooked I got my sides ready. I did some garlic mashed potatos, chicken gravy.
Tomato, cucumber and onion salad with a strawberry vingarette
The asparageus was just olive oil, then toss some turbinado sugar and kosher salt. Then grilled them directly over the coals as the chicken finished cooking.
And the star of the show the Kettle Fried Chicken.
My plate of food.
Thanks for the inspiration N8man. This dinner rocked!
