CGA: Fish & Seafood Feast

I just realised I do alot of my cooks just before sunset and pics aren't so great [emoji1]

Heat: Direct, 3/4 full of the regular chimney starter

Menu:
Squid
Prawn x 2 recipe
Scallops
Mussels
Sea Bream

I'm a sucker for fish & seafood, for such a small island (UK), surrounded by the sea. We really don't eat as much fish as we can, so much is exported out.

This was all on the Charcoal Go Anywhere (my most recent love alongside my hanging adventure), but indeed seafood on the Kettle is another regular cook.

Ripped from Barbecue by Christine France

1Ib mussels add 2-3 Tbsp water into a pot, cover and cook for 5 mins-ish (you could do this in foil on the grill too). Discard water /any mussles that do not open.

Place mussels on the half shell on a grill tray

Topping:
1 Tbsp of butter and Olive oil
3 Tbsp Parmesan (grated)
2Tbsp Parsley (chopped)
2 Garlic cloves (Minced/chopped)
1/2 tsp coarsely ground pepper

All mixed together in a bowl add a small spoonful onto each mussel, grill on medium (I also do hot and it's been fine) for 2-3 mins
