It weighed 15 lbs, using KBB, snake. After about 3.5 Hours had to rotate the brisket as it almost went all the way across the kettle so had to rotate it so the point wouldn’t be over the working coals. At that point I added coals and placed a piece of foil in between that part of the snake an the brisket to shield it. I must have taken 3lbs of fat off, just the hard stuff and left about 1/4 inch of fat cap on. The stall happened much later than what I would have thought. She’s been between 178-187 for over an hour.
