Food just before coming off the grill:


@1buckie the setup worked real well but I think I will try a'la Winz next time. The kettle ran rock solid at 244 for 3+ hours and was as easy to control as a 22 which was a surprise. One place I did get some beginners luck was in the fuel department... Exactly the right amount!



On to the table:





@acrossfromhoss The rib rub was excellent, even my wife commented on how she liked the "sweet to spicy" flavour. Thanks for the tips, I think I actually prefer the sides!

Heck of a cook right there.  beans, ribs, shrimp and those wraps of Troy's Dam!!! Everything looks fantastic. those wraps will be meeting up with some poached eggs and hollandaise very soon. Im glad the rub went over well and that you enjoyed the side ribs. Very cool to have been a part of the maiden voyage of the mother ship in a small way.

Buckie your bang on. I could get up and start a chimney of coals right now after seeing that cook on that rare beauty.  Thanks for the well wishes.
