Here we go!

This post will evolve throughout the day ;D

It wouldn't be right without celebrating this occasion... Sadly I'm home alone for the time being so cheers to all!

@Winz I could prob just fill up the rest of the basket as-is?? Or should I re-pile with one lit chimney on top?

Either would be fine.  My approach was to simply fill the basket about 3/4, and dump the lit chimney on top.  The key is airflow - as long as you can reduce/increase airflow, the kettle will not get too hot.  51 looks pretty tight so I don't think you will need to worry about leaks.  When I did low and slow, I found that I had to close two vents, keep the one under the charcoal at about 1/4 open, and I had to slightly close the top vent to get the right airflow.  Worked like a charm.
You might want to think about routing your temp wires through the bottom vent (the one you are controlling) as well to avoid pinch and leaks from the lid.

With your current setup, I am not convinced the kettle will get hot enough.  Fill that basket and control the air!

I just widened the snake a bit so it's putting off a bit more heat, now it's settling in where it needs to be. Thanks again Winz.

Almost ready for these!

Has anybody tried these little beauties out before? Silicon grilling bands. It says they are good for over 600deg so they should be fine. I hope they work out!

This is my sad attempt to replicate Troys Prosciutto Provolone Asparagus.

Everything looks amazing! I have been craving ribs and pulled pork lately. Those rubber bands look interesting, gonna try them out also. It is nice that they would be reusable.

Thanks, yeah I'm hoping they just wash up and are good to go again. The elasticity of them is perfect and so it gives you options no matter what you're wrapping.

...

On a completely seperate note - check out this cool slow-mo video of smoke rolling out of the Ranch. Almost memorizing ;)

Food just before coming off the grill:

@1buckie the setup worked real well but I think I will try a'la Winz next time. The kettle ran rock solid at 244 for 3+ hours and was as easy to control as a 22 which was a surprise. One place I did get some beginners luck was in the fuel department... Exactly the right amount!

On to the table:

@acrossfromhoss The rib rub was excellent, even my wife commented on how she liked the "sweet to spicy" flavour. Thanks for the tips, I think I actually prefer the sides!

Heck of a cook right there.  beans, ribs, shrimp and those wraps of Troy's Dam!!! Everything looks fantastic. those wraps will be meeting up with some poached eggs and hollandaise very soon. Im glad the rub went over well and that you enjoyed the side ribs. Very cool to have been a part of the maiden voyage of the mother ship in a small way.

Buckie your bang on. I could get up and start a chimney of coals right now after seeing that cook on that rare beauty.  Thanks for the well wishes.
