Seafood Boil
« on: February 24, 2015, 03:59:57 PM »
Sorry, this is not BBQ, but it’s outdoor cooking :)
Placed a pizza grill pan in the bottom of the Disc to act as a steamer. Started with the corn and the potatoes, since they take longer to cook

I had the liquid boiling in another pot, which had water, white wine, beer, lemon juice and halves, garlic, Old Bay, LA country boil pouch, some green herbs, and salt and pepper

Lined up some oysters first

Then mussels

Added some lemon wedges, green onions and slivered garlic and andouille sausage and poured the hot liquid over them. Also some parsley for flavor and color
[
Added some live blue crab

And covered the Disco so every thing could get steamed

Added some clams about half way through the cooking

And shrimp towards the end so they won’t over cook. Also had a pre cooked Dungeness crab that I added to reheat

And the cooking is done :D

Served with nice and crusty Baguette

It was a nice and easy dinner to make, and very tasty :)

Thank you ALL :)

1buckie,
Did you use wine and beer together in a sauce?
I can see how the two flavors would clash in a sauce. I used them in making the broth, which contained several quarts of liquid and no one flavor can be over powering. The wine was for some acidity and the beer to give a hint of bitterness. Most of the broth evaporated imparting subtle flavors.

@Ted B
Any time my friend :)

Sramesy,
The center crab was Dungeness crab.

Thanks Qreps :)
My next boil will definitely have crawfish. The weren't available when I did this one.
