Those Kettle Pizza things really work !!!! (more in a minute)
Been getting more back to grilling/smoking as of late, after having to really knuckle down & re-learn my trade of 45 years.....working with much different machinery than I ever did before....took a lot of concentration & has really soaked the energy for other pursuits (like being here & having something to contribute !!) out of, yes, getting somewhat older, but not much wiser, me....
Anyways....
First....lipstick on a pig....
I got this older Patent # Redhead, semi-crumpled lid lip, a few dings, that somehow ended up with stainless sweeps when I re-did 6 of them in one day awhile back....thing's a beast.....holds temp great & shuts down pretty tight to save coal....needed some handles...

Quite possibly plum wood from the Japanese plum that grew for decades & died in this yard right after I moved here in 2000...
Things have been strewn about & lost track of here @ the Kettle Orphanage, esp. after the tremendously violent winter we had (read 134% of the avg. annual rainfall in about 6 weeks during Jan./ Feb.), but....I found the MacGyver Upper Deck Smoking Rack ....so happy!!!!

Burned off the grate to clean it up & then did an injected tri-tip...
(dish soap not in injection.)
Saved the strained material from the bottle marinades to use as a 'wet rub'....
Sear 1st, ask questions later....
Droop test on the slice....
So.....fast forward to today.....
I started of to do ribs with a double chain setup in the Redhead.....
& the wife sez: "I''m hungry" (which means in wifespeak: "I ain't waitin' 4-1/2 hours for the ribs.....")
So....what do you want dear? Pizza? Yeah, but I don't want to heat up the house.....
It's OK, I'll just do it outside !!!
1) Jump the coal chains into Bob (trusty 3-wheeler), right next door...
2) Assemble KettlePizza in record time...
3) Fire off some lump....
4) Race up & pick up Murphy's medium & some cookie dough....
5) Set on ribs while pizza Kettle rises in temp....
6) Check temp & start pie @ about 525f.....
7) Finish pie in 8 minutes to quell the wife's food anxiety.....
8 ) Fire more coals as the ribs aren't quite off to a clean start...
9) Do up choc chip cookies.....
10) Let ribs wander thru the cookup in the fashion I originally intended, semi-long & low cook....

Held on low heat in foil, not a tight wrap....
Dang, that Kettle Pizza thing worked pretty good....set some coals against the back & a few right under....added just one piece of Coastal Red Oak, a hot burning wood & even a Murphy's came out grate!!
