Smoked Prime Rib

Prime Rib was on sale for 5.99 so I could not resist. Just me and the wife so it's a one boner....olive oil and Dizzy Pig Cow Lick rub:



My Kettles for the day....been using these 2 quite regular and really appreciating them lately:



I sear the roast first:







Then transferred to a Blue MT to finish low and slow.....about 220f or so with a couple small chunks of rum cask for flavour. Done after a couple hours:







The bone was flippin' delicious:

Told the wife when I get the rotisserie ring for my birthday coming up prime rib will be done on it for my birthday dinner!   

Are those baked sweet potatoes?  Haven't tried them like that.

Good looking cook MrHoss! I love doing my sweet potatoes on the grill. I'll be keeping my eye out for $5.99 prime rib in my area (fingers crossed and wishing).

Yes those are sweet potatoes @Lumpy Coal ...come out just fine on the Kettle.  @austin87 you may be waiting a while....given the exchange rate right now 5.99 Canadian comes to 4.56 USD.

Fantastic color on the finished roast.  I've been baking sweet spuds on the kettle for some time, you can really get a great flavor when they are punctured and left unfoiled.                       SJ
