10 pounds, 2 hours at 275. Internal temp of 170 and then off to rest...

The smell is awesome!

Those look great!  Are you flipping or just leaving them alone?  I'm a noob with only two cooks under my belt (on charcoal) and did wings yesterday.  I pretty much left them alone (based on a video I saw) but didn't get as much cook on the underside as I expected.  They were still fine, but guessing a bigger piece of meat might need flipping?

Kev, a basic rub. Onion powder, garlic powder, salt, brown sugar, chili powder and a little red peper, paprika and cumin. I just mid to taste.

M635 - nope. Didn't flip. They are in the same position they were in when I closed the lid.

Super easy.
