My first fatty under way

Have been looking around for something new to cook. My GF is getting tired of pork loins, shoulders and chicken wings.  Settled in on the idea of a fatty.  Took a while to figure what to put in it.  Ended up with this:

Layer of hot Italian sausage:


Layer of ground pork (GF doesn't like too much spice):


Layer of pepperoni covered in pizza sauce:


Added shredded mozzarella, chunks of fresh mozzarella, Parmesan, Italian chicken sausage, and sliced garlic:


It actually got a little more pizza sauce on top but I didn't take a pic

Rolled her up:


Weaves up some bacon:


Ready to smoke!:


Snake with apple and pecan:


Underway!



Grill is sitting between 238-242 and now I wait!  More updates will be coming soon!

Looks good so far. These things are so open to interpretation. Wish I could be there for this one.

Wanted: 18" Platinum any color will work
This is my Kettle there are many like it but this one is mine......

Almost there.  At 165 internal temp.  Just moved some coals from the end of my snake onto the hot coals to up the temp and get the bacon a little crispier.

Wow that turned out good!  Made some Texas toast and served the fatty on the toast then covered with more pizza sauce!

Around 160 moved coals around to get the grill hot to get the bacon a little crispier, here is the end result:

Almost the same size as the cheesy garlic bread I had:


On the bread plus the warmed up pizza sauce:

As we used to say in the barracks  ...  mag-frikk'n-nificent !!!   Looks like you chose a good combination of flavors.  I've always liked the version that is a combination of Veggie Pizza with Sausage (wrapped in bacon, of course), then served with Garlic Toast/Bread :) ::)  8)                          SJ

I've been following this since, oh...let's just say 04:42:06 PM. And it looks good.

And you dump a bunch of pizza sauce over it? Over a crazy kinda good looking roulade pointed upwards at a Patriot Missile gonna shoot down a Scud angle? You just covered the good stuff. Don't cover the good stuff.

What a great crazy roulade. I'd like to eat that, just put the sauce on the side. I'll dunk.

That's a pretty impressive fatty Mike. I would eat that any day of the week. Love the combo of ingredients and the cut slice is beautiful.

It was damn good.  I hear you @Jon about the sauce...I had some without an extra layer of sauce but preffered it with extra sauce once it was on the bread.

@austin87 -  Thanks!  I have a lot leftover so it looks like I will be eating it any day of the week!  LOL

I'll have to do homemade garlic bread next time.  Didn't want to fool with that this time since it was my first attempt and I had no clue how the timing would go.

I hear you on the timing thing. I was surprised how fast my first was done. Touch under 4 hours.

For your leftovers just hit it in a pan and fry an egg for the best breakfast sandwich ever.

Well...that didn't last long.  What an awesome treat it was.  Finished it off this morning for breakfast.  I was out of bread @jamesnomore so just went with the fried egg over it.  Great suggestion!  The yolk really made it delicious!
