The Big Cook

So my friend from work and I did our yearly lunch time pulled pork gig.  On Tuesday evening we bought about 120 lbs of pork.   That's 11 butts for over $200.00.  I also picked up rub spices, sauce  ingredients, charcoal and apple wood from wally world for another $90.00. 

We started cooking at 11:00 pm Tuesday night and finished up at around 6:00 pm on Wed.  Each butt was pulled and placed in a foil pan. 

I made the sauce while the butts were smoking.

Here's the  sauce ingreds:
64 oz ketchup
64 oz tomato sauce
8 cups dark brown sugar
4 cups cider vinegar
8 tbs Worcestershire sauce
8 tbs paprika
12 tsp onion salt
8 tsp dry mustard
8 tsp red pepper sauce

On Thursday morning I barely fit 8 pans in oven to reheat the pork. At 300 degrees, it took about 2 hours.

We had 100-150 happy campers after lunch. We also had 5 other homemade sauces contributed to the event.

I cooked 8 butts.  Here's 5 in my big smoker.

Daymn, 120 pounds of pork for 100-150 people?!?  That's my style...  lol  Great cook and glad to hear it came off without a hitch.
I've done 8 butts (65 pounds) at once on my 22" WSM.  Fun stuff for sure.
I've always had gas...  And now a bunch of kettles because of this place.  Thanks!
