Did this about a month ago and thought I would change it up a little, put kosher salt and course black pepper on beef chuck roast and cook it at 275 with hickory for 3 hrs. then put it in a pan with 1 cup beef broth 1 pkg. onion soup mix and 1 clove garlic and cover with foil and cook for another 3 hrs. at 275 and it turned out excellent, drained out beef broth and after shredding I added some of the beef broth in the beef.
