New Year’s Eve Rib Roast Cook

3 bone choice rib roast has been dry aging in the fridge for one week wrapped in cheesecloth.  Unwrapped it tonight, rubbed it down with  Bear and Burton’s W sauce - new to the market - and Kosmos Q SPG.  Will go on the rotisserie tomorrow.  Updates to follow!

Turned out great!  Complemented by Kellee’s home made scalloped potatoes and roasted broccolini.  Happy New Year WKC!

Thanks!  Yep, cooked to 122F IT and had a 30 minute rest.  Maybe a little rare for me in the middle, but the au jus was really hot and perfect for dipping.

Thank you!  Now to figure out what to do with the leftovers…. Philly cheesesteaks are one idea, but I’m looking for out of the box ideas too.

That looks amazing! My son bought me a rotisserie thing for Christmas. It hasn’t arrived yet, but I’m excited to try it out.
Whisk this isn’t out of the box…slice it thin make roast beef sandwiches. Do the grilled cheese style. You could chop it up and make carne asada quesadilla, tacos, or burritos. Beef stroganoff? A nice beefy soup?
