Chicken fajitas...this griddle is fully seasoned after this weekend's cooks.  Stir fry planned for later this week.

@bamakettles , please tell me more about this Summit Kamado griddle.
Is it a Weber branded item specific for the Summit?
BTW, your cook-ups look fantastic!
Q: How do you know something is bull$h!t?
A: When you are not allowed to question it.

Thanks so much @MacEggs it's all about the fun and sharing it when I can.... If the food turns out good, well that's a bonus! ; )

The griddle.... it's made by Kamado Joe for their largest kamado, the Big Joe which is the same circumference as a Weber Summit Charcoal grill.  Some of their accessories work on the Summit like the griddle, some need modification but can work like their JoeTisserie.  I've struggled with rust issues on my SNS plancha (22") and have been looking for an alternative.  I have the little griddle that fits my genesis gold, but it's a pain to clean and I have to take the grates out, remove the flavorizers, put the grates back in and keeping it hot is an issue.  I've decided get rid of both and use this as my griddling go to.

Amazon link...these are available from other retailers, but I ordered this on Friday and it arrived on Saturday from Amazon.

Recipe if you're interested

Two chicken breast cut in half for total four cutlets.   Thighs might be better.
Four pieces of bacon cut into smaller squares, mostly rendered.
16 ounces of cream cheese
16 ounces of freshly shredded sharp cheddar
Five jalapeños diced

The chicken to your preference.  Mix the cheeses and jalapeños in a bowl and then place in the cast-iron pan or casserole dish.   Top With the bacon and some shredded cheese.

Indirect at higher heat for 35 minutes with a small chunk of hickory or your favorite smoking wood

Sounds good. If you would shred the chicken it would make a good dip for chips? Tailgate fare.
