Whale

I want to hear more about the whale. Taste? Texture? Comparison? I'm fascinated.

The whale was a northern minke whale.  Unlike other species, these are not endangered and are sustainably harvested with regulated quotas.  Norway, Iceland and Japan are the only countries that allow whale harvesting, other than by native groups. Taking our summer vacation in Norway, I knew we had to give it a try.

The whale was sold as "hvalbiff",  or literally "whale beef".  Think a better translation is whale steak.  I have no idea as to the "cut" and it doesn't seem like they distinguish like you would with beef.

Surprisingly, the meat was extremely lean.  I seared it with the lid open and there were no flare ups.  I cooked it about medium rare.  As for taste, the best way I could describe it would be "gamey beef".  Not too strong, almost like venison.  I ate moose when I lived in Newfoundland and that had a stronger flavor.

I would cook it and eat it again if I had the opportunity, but I would probably not eat too much because of the mercury concern.

Nothing!  Had to work last night so I got off early today and decided to experiment with the Summit and work on temperature control.  Lit some leftover lump with the gas assist, threw on some cheap Royal oak and a few chunks of oak to see what happens.  My deflector is not stock, it's a custom piece of steel that probably weighs 20 lbs.  Charcoal grate isn't stock either, it's cast iron, brand unknown. Anyway, about an hour and a half in and it's settled on about 260F with bottom vent in the totally closed position and the top vent barely cracked open.  It refused to go below 300F without additional top vent choking.  But once it settled in, the smoke was clean and blue - very little if any at all.  Early on it was smoking like a Peterbuilt under heavy duress.  Fun to experiment without ruining food.....

Choice fillets and the last few oysters from a half bushel (50-60) I purchased last Friday. My wife will not eat oysters, so that means more for me.
Cheers
