For smash burgers I grind boneless chuck rolls and brisket trim. First grind is with a 6mm (.236 ΒΌ") plate and second grind is with a 3.5MM (.137 1/8"). A finer grind works great for smash burgers and meat balls.

Thick burgers (5-6 oz.), meat loaf, tacos or any recipe that requires ground beef I double grind with a 6MM plate. The finer texture (3.5mm) does not work well for thick burgers, as it makes the burger to dense.

Last weekend I ground a 25lb chuck roll and added five pounds of brisket trim. I would say this batch was a 70/30 mix.
