If anyone is looking for an awesome skirt/flank steak marinade this one is the stuff:

Skirt steak was marinated for 6 hours with:  2/3 cup olive oil, 1/3 cup soy sauce, 2 tbsp lime juice, 1/2 tsp each of kosher salt, black pepper and red pepper flakes and 1 tbsp brown sugar.  Grilled over a bed of hot lump charcoal on the Weber Summit to 125F IT turning over often to ensure a nice outer crust.

All the pork chop talk inspired me... these were really good, SPG for seasoning, indirect to 135 and seared as others have done.  So tasty....

^ Looking good! Hey Grill Hey has some excellent recipes. I really love her Jack'd up meatloaf and need to make it again soon!

If you get the chance be sure to try out her Maple Bourbon Glaze - its insanely good. It's quickly become a staple in my sauce cupboard mainly for sweet ribs and burgers.
