Beer Can vs. Roti?
« on: July 29, 2018, 12:50:25 PM »
So, which does a better job with a whole chicken? Beer can chicken, which is awesome, or rotisserie chicken?

Which one comes out more moist, juicy, and tender?

Roti or spatchcock. Beer can chicken doesn’t really do anything for the chicken. I worked with a guy who insisted that I was wrong. We had others on our team try our chicken and no one could tell which one was BCC or spatchcock

I’ve done both. Rotisserie...and it isn’t even close.

Rotisserie, hands-down. Beer can chicken is a gimmick. Meathead Goldwyn at AmazingRibs explains it very well: https://amazingribs.com/tested-recipes/chicken-recipes/debunking-beer-can-chicken-waste-good-beer-inferior-cooking-technique.

The beer can essentially is wrapped in a chicken koozie. If you're cooking the chicken at a proper temperature, there's no way the liquid in the can get even close to steaming or evaporating or doing anything beneficial.

Your best bet is to brine, then rotisserie.

I like all methods if cooked right. I don’t do beer can anymore. I started spatchcocked awhile back then went a step further and cut the bird in half. A little easier to handle and I can’t tell any difference.  Roti is great too.

Never done rotisserie, so can't say there. Not a fan of beer can chicken. Spatchcocked is the way I like to go whole bird and all...
