It's even better now that I've upgraded the kettle to an SJG. SWMBO had bought some ground turkey to make a white bean chili so I wanted to smoke that and give it some additional flavor. That went in CI on the bottom grate.
She also had bought some country ribs to make carne de puerco. She really wanted a shoulder but did not know that Sam's labels them as butts, so she went with the country ribs which are just a cut up shoulder. They went on the top grate.
I fired with those newfangled Royal Oak briquettes and added some cherry and hickory chunks for smoke. I also had some Jack Daniels oak chips and mesquite chips so I threw those in for good measure. Perfect! The ribs were a little over seasoned and under done because I was expecting them to be cooked more when she made the carne, but we had some for dinner anyway and they were good.
