Nice! My new method gets it done in 5hrs and to me it comes out even better than low and slow. More of the fat rendered out at a higher temp. 300 degrees for two hours then in a pan for 3hrs with a little apple juice covered at 300 degrees.

Got my brisket in a pan and covered up after smoking for couple of hrs at 300 degrees so I killed two birds with one stone and put the kielbasa on top to smoke at the same time.

Holy Cow those photos and posts look great !  My plans for Labor Day .. wishing I was back in the states with everybody ;-)
With that said.. I wish EVERYONE a super fantastic Labor Day weekend! As a true Michigander I know what this weekend means to all the hard working people in the states! The true back bone of the economy and the heart and soul is hard working people!
All I can ask for is ...  as you are enjoying your well deserved BBQ weekend please think of others that don't have it as good as you may have..and maybe invite someone you know over for a good meal and let them enjoy the day as much as we enjoy cooking for them.
