Grilled Stuffed Calamari

First we cleaned the squid , removing the tentacles (for another use) along with the outside skin. They were then turned inside out and cleaned as well . The result is tubes of clean white meat .




After cleaning it was time to make the stuffing . We sautéed some bacon and to that added yellow onion , garlic , mushrooms , cooked shrimp , grated dry cheese and bread crumbs

We allowed the stuffing to cool and then filled each squid with a few tablespoons of the mixture



The meat is super thin and can turn rubbery if over cooked , it's best to sear these hot and fast 2-3 minutes tops. We used a gasser with great results .





These require a lot of prep and stuffing them is not the easiest of chores but the payoff was delicious

Wonder if a piping bag would speed up the stuffing process.

Wow!!!!  Awesome cook.  Just had some really good grilled calamari at a new italian place on Friday.  It was amazing, but yours looks even better!

What will you use the tentacles for? They look good and I'd try 'em...but might have a couple dirty jokes first.

It would , you'd have the process the stuffing first , a sausage stuffer would work too .

They burn off on the grill and they are also chewy
