Braggin' about my Babydoll

I got home from work last night, and my lovely & talented wife was baking a rhubarb cake for me to take to work today. It turned out amazing, thought I'd share a couple pix.  It ain't off the grill, but was awesome anyway.

That looks really good! How about a recipe? We're huge fans of rhubarb and would really enjoy a rhubarb cake.

My wife's grandmother (in her 80s) makes this and is phenomenal.  Great pics!  Thanks for sharing!

OK kids, I promised my wife's recipe. Here you go, enjoy!

Rhubarb Coffee Cake

Cake
1 stick butter
1 1/2 cups sugar
1 egg
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 cup milk
2 cups cut rhubarb

Topping
1/4 cup sugar
1/2 tsp cinnamon
  • Cream butter & sugar together.
  • Add vanilla & egg. Mix.
  • Work in the flour & baking soda a little at a time.
  • Slowly add milk and mix until everything is smooth.
  • Once it's mixed smooth, fold in the rhubarb.
  • Pour into a greased 9x13 OR 9x9 pan
  • Sprinkle topping all over the top.
  • Bake at 350 until a toothpick comes out clean.
  • (9x13 - approx 30 minutes, 9x9 pan - approx 50 minutes)
Serve with whipped topping.

that sounds good too, i bet it'd be rockin' with blueberries instead (or in addition to) the rhubarb. hope you make it with blueberries and takes you back a ways. there's nothin' like the cookin' you got when you were a kid.
