Cooking some ribs on a quiet Saturday.  Some firsts for are making it a fun cook...
-First time I have cooked on the Chestnut
-First use of my new SnS
-First use of @CatskillSmoker's maple sugar in the rub

Can't wait for dinner!

That is the way to put all things into play at once, love the chestnut, may be inspiration to break mine out for another cook

Looks great.  I’m getting ready to cook on a vintage daisy wheel Kettle for the first time.  What temp and vent settings did you cook on?

I was cooking at 225-250 with a slow ‘n sear. Too vent was wide open for most of the cook and 2 bottom vents were cracked open and 1 was closed.
