3 pounds of hamburger, eggs, panko bread crumbs, Worcestershire sauce , salt , pepper , onions , garlic , ketchup.
To that I added cooked bacon , hatch chilis , cayenne pepper.
Mixed up a pack of Idahoan instant potatoes ( baby red ) and to that I added fresh garlic, about 3 cloves, salt and pepper . I don't cook these instant potatoes as directed on the package, merely use hot tap water, mix in the spuds and use them.
Press out your hamburger mixture to about a 1" thickness all around , make a pocket in the burger for the potatoes to go .
Spread the spuds around leaving a seam of burger to seal the edges .
It's best to do this on some sprayed foil to make sealing the meatloaf easier and I like to start the cook of the meatloaf in the foil as well to minimize some the grease dripping into the grill .
I set the grill up for about 350 and smoked the loaves with a small piece of apple and hickory woods for about an hour , I glazed the chili loaf with an apricot jalapeņo jelly at the end .
The hatch chili flavor really took this meatloaf to a new level and the jelly glaze was a great compliment to the heat .
