Picked up a small package of these at the mega club. Decided to go reverse sear. Took 20 minutes to get to 110 degrees. Then seared direct 1 minute 45ed for a minute more. Then the same on the other side. They all temped at 135 to 145 when I pulled them. Absolutely worth the extra few dollars for the tenderloin on occasion. Reverse sear worked out beautifully on the thick cut.

just a tad of brown on the outer edges !!!!!
I have a heckuva time getting those right.....Good Show !!!!
