Brisket cook is on!
« on: September 01, 2013, 10:51:30 AM »
6 pound brisket currently at 154, grill has been holding around 230 since 9am, doing the ring of fire/snake with a local rub... small top vent adjustments due to wind and wood I imagine.

Hopefully more pics to follow.

Getting nervous, snake is coming around the bend with a stall and 40 degrees/2 hours to go.

You'll be fine......turn the brisket perpendicular from the pic & then you can use your flip-ups & add some to the chain.......worst case, just take the grate out brisket & all & set up more fuel.....again, you'll be fine......that looks really nice, so far...... ;D

Thanks! Took it off at 160 and put it in a tin pan covered in foil and put it back on, turned as you said. 171 now. Added fuel while I was at it.
