@glrasmussen  Theoretically, you could use something like this:

I would hot sear them a LITTLE bit in cast iron to get a little more 'roasted' flavor out of the deal.............maybe not quite like what Winz has got going, but will approximate the  taste in the finished dish..............

I had no idea about dropping a dutch oven in there.  That is pretty awesome.  New want!

Interesting on the the green chili stew..... I Was expecting something with tomatillos, which is how I usually make it.  Well, tomatillo salsa is made first...then you use that for a stew.  But I'm sure it tasted great because it looks sooooo comforting.
