BBQ Meatloaf
It's 0°F and I am making a meatloaf

1.5#'s ground chuck
1.25 #'s ground pork
½ of a green pepper chopped
½ of a orange pepper chopped
½ of a yellow onion chopped
½cup of Veteran's original BBQ sauce
½ cup of steel cut oats
½ cup of bread crumbs
a teaspoon of salt and pepper
Started a full chimney of B&B Lump charcoal. Split into 2 baskets and preheat grill. Added one chunk of oak above basket of coals.
Mixed the meat together with the eggs.
Fried the peppers and onions in a cast iron skillet. Added bread crumbs, oats, spices, peppers, onions and BBQ sauce and mix well. Removed from mixer and formed a loaf.
Grill is up to temp and the loaf is on.

It was good.
I wanted to do the bacon weave but we had pork sausage with breakfast and brats for lunch. Didn't want my heart to explode after dinner.

Looks good. Haven't fried peppers and onions first before. What is the advantage? What temp did you use? What was your internal temp and how long did it take? Want to try it this week.

I really like the B&B lump coal.
I fried the onions and peppers first to get them to slip past my kids a little easier. It cooked a little faster than I would have liked. I wasn't paying attention to it while I was prepping potatoes. I looked out after putting them in the oven and saw the temperature had climbed over 400. Normally I would cook this slower around 350. And it would have been wrapped up in bacon. Internal temp was 165 in the center.

Looks incredible! Fried onions and peppers is the only way I eat them! So not just for kids lol. I'll give this one a try. I actually prefer no bacon weave

On the grill is the only way we cook meatloaf in our house now. First couple I cooked in a loaf pan in the oven turned out terrible. Floating in a pan of grease after cooking. Sometimes on the kettle I will put foil under it and angle the sides up so it is a little more indirect. It was cold out and I remembered after I had already thrown it on so we just cooked it that way.

A great way to serve the leftovers is sliced, reheated on the grill with extra BBQ sauce and then served on a bun topped with some french fried onions or onion rings.

Somehow I missed the eggs in my list of ingredients.
Pretty sure it would still work with or without.
But I believe that I used 2 in that loaf.

Have to try a meatloaf this way. I usually put in a line of hardboiled eggs when forming the loaf. Every slice has some egg showing looks nice and stretches the hamburger. My grandchildren said my food tastes better than their mothers only because they don't like bell pepper and onions. Well they eat it here because I run it through the food processor turning into mush.

Never had smoked meatloaf. Did you like it better than oven-baked?
I honestly can't remember the last time that I made one in the oven. So I guess we like them better smoked or just grilled. This last one, I did not put any wood over the coals. And probably half of the time, we wrap them in a bacon weave.

@Kneab Have you ever tried using Stove Top Stuffing instead of breadcrumbs?
