All in all for my first effort I was pleased. I really liked how well the Weber held the temperature, and the staggered wood chunks imparted a really good smoke flavor. They were a little bit overdone but not too bad. I had some BBQ sauce on standby but never opened it. I did order up a Thermapen for next time. Should be in over the weekend they already shipped it out  8)

Great looking ribs! Now take a couple minutes and log every detail you can remember about the cook, especially anything you would do differently next time. You'll take your skills to the next level a lot quicker if you do that regularly.
