Once the oil is up to temp I close the lower vent completely. That only marginally makes a difference with the lid open but helps.  Worse case scenario is you close the lid and vents. At least that's what I've rehearsed in my head .

I get more btus this way and I like the even heat I get across the skillet.

Those look awesome, I have fried on the grill many times, only once did I have an oops but it was a really cool fire, unfortunately i was to busy freaking out to get any pics
Seeking a Black Sequoia I know I know, I'd settle for just the tabbed no leg grill

I have done the same thing except I use a deeper pot. The first time the oil got too close to the top of the skillet and I was worried I would end up like a bad video on frying turkeys. The pot gives me piece of mind.
