NY strip reverse sear

First time doing a reverse sear came out surprisingly good. I didn't get as good of a sear as I wanted the coals took a while to heat up after I moved them from the side to the middle. Got a perfect medium rare.

I don't do reverse sear on steaks but that makes me think maybe I ought to...

I was reluctant but I'm not sure if I will ever cook them another way now

Looks like you nailed it. What internal temp did you start the sear?  I'm usually shooting for 115ish before I sear.

That seems perfect. I was pulling them at 125 but they would turn out medium well. 115 seems to be the ticket. It took me a few cooks dialing it in.

You nailed them!

Just some advice.  I'm guessing since you moved your coal to the middle, you may have used the GBS sear grate (the hatch marks look like it too). 

From experience and if you want nice grill marks, the GBS sear grate works much better if used with a front sear.  I would imagine this is so because most of the browning process has occurred in the indirect pre-sear cooking.

Since I got my Slow n Sear, I rarely use the sear grate because a reverse sear with the SNS does such a good job with bumper to bumper browning.

I actually used my grillgrates I guess I could have just left the coals where they were. Maybe I will try that next time

Started using reverse sear on ribeyes.
Don't know if I'll ever do them different.
Have actually done a couple with frozen centers and they turned out fantastic.
