Got the Cajun Bandit Stacker 18.5 and 22.5, love both of them. The stacker, coal ring and pie pan used with the outrider has made me forget my 18.5 WSM.
GET IT!!!!

I have the Smoke-EZ http://smoke-ez.com/. LOVE IT! You cannot go wrong with that product. I bought a bigger diameter stainless steel bowl to replace the "water pan" to act as a heat deflector. I wad up aluminum foil and place in the bowl, then cover with a sheet of aluminum foil with a bit of a dip in it to catch drippings. No need for water IMHO.
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

I had an 18 & 22 wsm but the ash clean up and rainwater collecting on the lip was a deal breaker for me so i got rid both of them. Ended up building my own smoker using 2 stackers to go with a kettle. Lots of work and imagination but the end result rival or surpasses the 22 wsm in terms of smoking capabilities.  Not cheap by any means as the parts and all the accessories that i used cost just as much as the combined cost of a new 18 & 22 wsm.  Obviously there were many parts that i added to the stackers but the versatility is unmatched. Double rotisserie, hanging rack etc. Too bad i don't have a 22 wsm anymore to do a side by side comparison.

Your custom rig is pretty sweet. I agree about the wsm catching rain. I hate that. Kettles will smoke right through a rain. I run a snake before I leave for work and it has never failed me when I return.

Not to belittle anyone that wants to go all out, but I am finding that the standard Weber 22" kettle grill when used with any of a variety of offset cooking methods, makes for an excellent smoker on its own. All you need is a grill and foil drip pan.Okay a thermometer helps, a LOT... The only reason for me at least to do the stacker jobs is to get more internal chamber space to do bigger cooks... Second grills on the market via Craisgslist are somewhat plentiful,  for not a lot of money... Might as well go that way.
