Chuckie on my Mini WSM

Had a chick roast in the freezer for a couple months so I decided its time to cook it up.

Used some old school onion soup mix

Into the spice grinder with a couple dried porcini mushrooms

Mixed in some turbinado sugar, chili powder, pepper, cumin, cayenne, and paprika.

All rubbed down

Fired up Wee Man with some KB and a couple pecan chunks


And we're off and running

In a pan with slices onions, beef broth, garlic a and some coffee

My mom always says everything is better with lipton onion soup mix.

That's a cool Mini.  Love the giant tongs.  It's all relative.  ;D

Great looking chuck and I like the onion soup mixed with mushrooms idea and great looking rub.

I forgot to take pictures of the finished product but I did get a shot of some leftovers.

Crusty bread, Shredded the beef, onions, cheddar and Bbq sauce. Also mixed some au jus with some bbq sauce for dipping.

Looks great! I grilled fish for dinner and now I have a taste for beef.  ;)

I love my mini too. I think it's my most versatile cooker.

Do any of us use those anymore? Well ... except for ... maybe our lovely wives still use one.  ;D ;) :P

I use a crock pot to make steel cut oats. I fill it with 2 C oats and 8 C water and put it on a timer that turns it on in the wee hours of the morning for three hours. When we get up, it's ready to go. No, we don't eat 2 quarts of oatmeal every day! The rest goes into the fridge and gets micro-waved on subsequent mornings. I eat it every day. Every day.

That sounds good! I should try that sometime.
Of course, I was only kidding when it comes to the Crock Pot. In fact, I have 2 of them.
Up here in the GWN, going outside is not always an option. Need to cook inside when required.  :D ;)

I use my slow cooker to make chicken stock quite a bit. I save leftover chicken bones in the freezer and when I have enough, throw them in the crock with some onions, carrots, garlic, celery, etc and cook overnight. Good stuff!
