Cool! How long does a brisket that size take to smoke?! 15 hours? 20? More?

I haven't tried a brisket yet, but I recently bought a Slow 'n Sear so I think it's time may have come...

So, what's gonna happen, I'll let it smoke on the kettle for about 5 hrs, then, because I'm old and lazy and I don't wanna stay up up most of the night, It's going to go in the oven at 225, overnight. I'm gonna sleep!!!! When I get up in the morning..... we'll see how it goes.

Go approximately 1 hr and a bit per pound. That's a decent rule of thumb. But it all depends(no not the diapers) on several variables. You have to look at thickness of the brisket(most important), weight, cooker size, cooker temp.....


This one, I think may have gone off.

I see my SnS done up to slow smoke, has burned through the charcoal in less than two hrs.  There's a bunch of  variables that could have caused this... but it is what it is.  I'll fix it... The brisket will go in the oven sooner than planned, and I'll adjust the temp a bit.

Fifteen pound heat sink ate up the charcoal.

Nice looking piece of beef!
I recommend the snake / fuse next time.  Easily can go 8-10 hours ... Re-fuel if, or when necessary.

No need to whimp-out and use the oven.  Just sayin' ...
