Cool! How long does a brisket that size take to smoke?! 15 hours? 20? More?

I haven't tried a brisket yet, but I recently bought a Slow 'n Sear so I think it's time may have come...

So, what's gonna happen, I'll let it smoke on the kettle for about 5 hrs, then, because I'm old and lazy and I don't wanna stay up up most of the night, It's going to go in the oven at 225, overnight. I'm gonna sleep!!!! When I get up in the morning..... we'll see how it goes.

Go approximately 1 hr and a bit per pound. That's a decent rule of thumb. But it all depends(no not the diapers) on several variables. You have to look at thickness of the brisket(most important), weight, cooker size, cooker temp.....


This one, I think may have gone off.

I see my SnS done up to slow smoke, has burned through the charcoal in less than two hrs.  There's a bunch of  variables that could have caused this... but it is what it is.  I'll fix it... The brisket will go in the oven sooner than planned, and I'll adjust the temp a bit.

I recommend the snake / fuse next time.  Easily can go 8-10 hours … Re-fuel if, or when necessary.

No need to whimp-out and use the oven.  Just sayin' …

I really want to try a brisket. But the $$$ typically takes me further down the selection to pork shoulders. Maybe one day.

I did a snake a few weeks ago, and it didn't last long. That's why I didn't want to try it this time for a long overnight cook.

A couple of big cans of beans... 1/4 cup or so of sugar(brown white... whatever) a diced onion sauteed, a green pepper sauteed a tbsp of mustard powder,  half a bottle of BBq sauce, some crushed pineapple, some maple syrup....

Basically, it's a couple of cans of beans with a bunch of stuff added and then smoked for three or four hrs.

If you have a GFS (Gordon Food Service) near you, they sell their brisket for about $3/#

I love bbq beans. Did you do them in the basement under the brisket or separately?

Ìt came out good. I think a bit hot because it shredded and that's not what I wanted .but it was tender.  A success in the end. I was happy and it was a good night.
