First time Smokenator user

So I ended up with a used  Smokenator that cleaned up well. I'm excited to try this out and have no reason to make a big cook. So I prepared a very small 2 pound pork butt that I butterflied to get more flavor into it. I usually do this to all my pork butts.
  Here is that Smokenator after I cleaned it up.

The but was in the fridge overnight in a new dry rub a buddy of mine send me. He owns a spice shop in Oakland California and Ive been wanting to try it out.
I chunked up some shag bark hickory and will be burning this down as my heat source.

I'm chipped up some Red Delicious Apple Wood that's been seasoned for 13-14 months.

Will be smoking this small butt for 3 hrs at 225-250 then wrap and finish off.

Did I see no charcoal ?? ... Just wood ?? ... Man, I like your style.  Never tried this, but I am curious.  :D 8)

2.5 hrs into the cook and No peeking yet. Smokenator has been doing its job and maintaining heat. Still have a very thin puff of thin blue smoke here and there..

No, no charcoal..... Was I suppose to use some? I haven't used charcoal in a year or so. I've switched over to pure Red Oak or Hickory wood logs that I cut down into large wood chunks as pictured.
These I need to burn down into coals as my heat source.  Takes about 30 minutes to get these larger chunks going. My new 2Gen gas assist performer makes lighting them easier. I was using a small hand held torch underneath the wood chunks before to light them.

Mind blown. Something else new to try. I've got a smokenator that I never use. This looks like a great use for it.

2-3 hrs is enough to get the smoke flavor.



At this time the wood coals are just about spent and once I open the kettle it's time to add more fuel (wood).

The wood will ignite once laid over the remaining coals.

By the time you are done wrapping the pork butt the new added fuel is ready to finish the cook.

She will only smoke out for the first 10 minutes or so then settle down once the new wood has turned to red hot embers. Hence the name "Smokin Performer".

Sometimes you need to remove the lid and burn some wood to make enough embers for a cook. Here is some cherry wood burning.

I'll have to try this Smokenator with with the recommended charcoal use next time. I may get better results that way. Didn't get the bark I usually get doing it my way.
  I usually burn wood and pile it along one side for indirect cooking. Then flipping the hinged grate to add more wood along the cook.
   I had fun and always like to experiment on the kettle.

Thank you for posting this.  Excellent stuff, I must say. 

Please post more of your cook-ups .... Especially the ones using just wood.   :D :D
