Last night I prepared 2lbs of skinless boneless chicken thighs and turned them into my Cherry Mesquite Smoked Chicken.
 
Starting with 4 split logs of seasoned cherry wood. I usually aim at burning up two logs into embers to rest in a bed between the other two logs.

 This cherry wood I got from a friends 80 acre farm. Has a great color when split.

Loving the gas assist to start these logs.

Do you think I could get way with burning some ash then adding unburned smoke wood?  I have plenty of ash. Not sure how it would taste though.

 I've never used Ash wood before. But I do add unburned wood chips/chunks over hot embers. I added mesquite chunks here. Just enough to add smoke for the first 30 minutes.
