THROUGH THE MUD BBQ TEAM

Of all the burgers I've had, there are a handful that stand out as my favorites.  I have taken the toppings,  techniques,  and ingredients from these great burgers,  and put them all together into one Ultimate Burger!

I couldn't find ground chuck at the butcher so grabbed some lean ground beef and a couple fat caps from some top sirloin.  Took it home and ground it all together.

Hand packed it into 8oz patties. Brushed with mustard and sprinkled with sea salt and cracked pepper.

Dipped the face of kaiser buns in the bacon juice (I don't like the word grease!). Placed them face down in a pan with an ice cube and covered  with a lid. This crisps up the face of the bun, but makes the rest of the bun warm and moist.

Patties cooked over direct coal with some hickory, to 140f internal.

In order, this is how it is topped.

Toasted/steamed kaiser roll
Burger sauce (mayo, ketchup, Worcester,  Chipotle Tabasco)
Lean beef patty with ground fat cap from top sirloin
2 slices Havarti
Red onion rings ( marinated overnight in white and Balsamic vinegar, and sea salt)
Spicy pizza sauce
Sliced Roma tomatoes
Spinach
Maple bacon with cracked pepper

All these ingredients have been hand picked to enhance the flavor of the beef, not mask it.

Noticed the snow and the blue kettle myself. Dang good looking burger, gonna try it myself.

Good job on that. They taste better when you grind your own beef just before making the patties.
