My girlfriend and I celebrated our two year anniversary last night. She is a special woman and deserved a special meal.
I picked up some wild Copper River salmon (this stuff is incredible, it's
soo good and the color is just amazing). I made a glaze with red miso paste, sake and mirin, and some honey.
She made a salad with beets, cucumber, red onion, avocado, tomatoes, and a mix of arugula and red leaf lettuce. I made a dressing with a reduction of apple cider vinegar, red wine vinegar, honey, and used rendered duck fat as the oil. I would highly recommend a duck fat dressing. It's rich but not heavy and silky smooth.
