Anniversary Salmon

My girlfriend and I celebrated our two year anniversary last night. She is a special woman and deserved a special meal.

I picked up some wild Copper River salmon (this stuff is incredible, it's soo good and the color is just amazing). I made a glaze with red miso paste, sake and mirin, and some honey.

She made a salad with beets, cucumber, red onion, avocado, tomatoes, and a mix of arugula and red leaf lettuce. I made a dressing with a reduction of apple cider vinegar, red wine vinegar, honey, and used rendered duck fat as the oil. I would highly recommend a duck fat dressing. It's rich but not heavy and silky smooth.

Salmon cooked indirect at about 375 degrees with cherry wood smoke





The salmon slid right off the skin when I picked it up with the spatula

You're not kidding about the color, that first pic looks like a block of candy. Everything looks fantastic. Knew you'd get the glaze you wanted.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch
