First Cook on the Brownie

Had a 12 lb bird in the freezer ….. Been there for well over a year.  Had to cook it up.
Took it out about a week ago to thaw in the beer fridge.  Then brined.

Most of the cook was done in the 375-400℉ range according to the therm poking into the vent.
Was done in just under 3 hours.  Measured the IT using a trusty Thermapen.  An essential tool, IMHO.  The meat was still nice and moist.
The drippings made for amazing gravy!  Happy Easter, everyone.  :D

Two chunks each of apple and cherry.  Sorry, I forgot to mention that originally.  I like these for turkey and chicken.
