@Tuberoller as promised, here is the first cook on the griddle

Placed the griddle over 1 chimney worth of coals and the temp climbed up to 400 within few minutes. The IR thermometer is very helpful when using something like this for the first time. It helps tell what temp the griddle is running, but also helps identify cooler spots for moving things when fully cooked.

I like the griddle temp to be around 375 degrees; it's the perfect temp for variety of food. When it reached 400, I placed the burgers and sliced mushrooms. I figured the temp will drop a little once the cold food hits it

Added onions and peppers

And thinly sliced Ribeyes

The griddle pairs well with the Performer, since the Performer cart is perfect for having ingredients near by :)

Added smoked Provolone cheese to the burgers

And the burgers were done

Added potatoes and Ciabatta Bread

And tomatoes

And the cooking was done, onto assembling the sandwiches

Placed a pepper ring on the burger and filled with onions and mushrooms

Topped it with the thinly sliced Ribeye

And then the grilled tomatoes

And the Big Philly Burger was ready :)

I was really impressed with the griddle. It cooked evenly and cleaned up easily.

I think the thickness of it helped in maintaining even temp and prevented food from getting scorched. It was definitely worth the money and fun to cook on. I'm definitely going to use it often :)

"Why do you have so many bbq's?"....."I just like lookin' at em' sometimes....and I have enough purses and shoes"

Always enjoyable watching at artist at work.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

that is a great cook
If we were meant to grill with gas then the garden of Eden would have had a pipeline

Wow, great first cook on the griddle! The burger alone would have been a great post, but on the griddle, with the steak A+ all the way!

Tuberoller

That looks fantastic. Good stuff. I bet if tasted as good as it looked.
