Cooking with skewers

Cooking with skewers, or  “Grateless Grilling” this is an ancient method of cooking.
The food cooks gently by the radiating heat from the coals and not by the heat of the metal grate.



Even the veggies cooked this way taste so good. They get a very nice smoky flavor.


I’ve cooked chicken wings, legs, pieces...etc. Yes, you don’t get the grill marks, but the wings and the legs get very taste slight char on them

Even sausages and seafood can be don this way

I’ve even done whole fish a while back using this method.

I really like this method and hope many would give it a try. You don’t need a special grill like Mangal (no grate grill); any grill can be modified to do this. I realize that sometimes a good searing on a hot grate is needed for some foods (like steaks), but it’s always good to have other options.

I can see that as an advantage the old Weber kabob ring had (1Buckie's example ... notwithstanding ) >> but he knows any of us here would gladly chomp his grilling "failures"
