A go to favorite
« on: March 02, 2014, 11:25:45 AM »
So after some dry Kabob's a couple days ago I knew I could go back to chicken quarters.
They have always turned out well for me and today was no exception....
I trimmed them up and injected a mixture of Baby Ray's, and a few other things under the skin (not in the meat itself) and went with Simply Marvelous sweet and spicy rub on the outside.
Mopped with the same sauce as injected with near the end.
And joined by fried Yukon gold spuds, cheesy garlic drop biscuits, and some rabbit food on the side...
Tasted great, now to plan the next one!

I do these all the time and they are about our favorite cut of chicken. Yours look really great! The rub sounds like a winner too.

Thanks! I like being able to pick these quarters up for less than a dollar a pound too.
A lot of good eating for the money imo :-)

^^^^^ Absolutely beautiful cook! ^^^^^
No one at our house really likes breast meat, so we do plenty of leg quarters when we can find them. Often have to settle for thighs. ;)

Thanks! Same here... We used to only grill chicken breasts as I got frustrated trying to grill bone in chicken with a gas grill. So it's very rewarding to be able to have these turn out great consistently with a real grill. ;D

The plate up looks real nice, but that last cooker shot.....I could eat those right off the kettle !!!!

Yeah...these turned out absolutely gorgeous.  Tell me more about the rub.  Much sugar in it?  I've heard of SM but have never used them.

Yeah...these turned out absolutely gorgeous.  Tell me more about the rub.  Much sugar in it?  I've heard of SM but have never used them.
I'm not sure of the quantity of ingredients but brown sugar is listed as well as cane molasses.
Tasting it plain, it first has a sweet smoky flavor followed by a little lingering heat.
It has a little different flavor profile than Plowboys Yardbird rub but is similar enough that I have a hard time telling the difference without knowing which is which and I would use them interchangeably.
I will say I am partial to Plowboys because it is more of a mixture of spices rather than what looks like a processed rub.... I don't know if that makes sense?
I'm sure others could answer better. :-
