Smoking Chipotle

They growing slow but safe.  Does anyone smoked their jalapenos? Pecan is the wood to use I believe. Low temp and long time I guess?

Pecan is the traditional wood. I smoked for a couple of hours, dehydrated until dried, and then ground. I then used the chipotle powder in my rubs. Be safe, make sure you have proper fire extinguisher!

Looks good. I have only dehydrated peppers. I’ll smoke some with this years peppers.

Cut ripe peppers in half. cut side up in the smoker. Smoke for a couple hours and dry in the dehydrator. I add Serrano peppers to the mix to kick up the heat.

Usually keep temps down below 200. Not trying to cook the peppers as much as flavor them. The dehydrator will finish the job.
