Good call going with whole wings.
I prefer those, too, as they are much easier to work with.

When you cook them direct on a kettle, is your charcoal in a single layer?   The goal is direct, medium/low heat but not as intense so you get crisp skin without burning or undercooking the interior.

Pretty much. After flipping I close the lid to control flare ups.
