Christmas Rib Roast

Smoked at 225 for about three and a half hours over apple and maple, then finished on the gas grill as hot as it would get. After testing for a half hour, the internal temp was 128°F.

Came out wonderfully.

I was planning on doing the same thing but I did mine at 275, 300. Then the last half hour cranked it up to 400, by adding more coals. I also used hickory. It had a nice crust on it. Your looks great. I love these for Christmas!
