Baby Back Kettle

Do other people prefer 3 hrs indirect at 270?  Bare with no sauce just rub-- no spritzing?  need to know if this is fine for life.  I like it has a little pull off the bones--not dry? Any other people like this way? sauce them on the plate if needed.

I like that way at 275ish. Not 370

I run ribs around that temp also. I do spritz and generally sauce the last bit just to let the sauce set.

I didn't like sauce either.  I iust rib and spritz. I do the old 3 2 1 (slightly modified depending on the rack) method at 250ish. I also like them falling off the bone -  I'm an uncultured hoodlum.
